We all know that the best part about picnics is the food. I mean, who doesn’t love to eat outside? In the same token, it certainly pays off to prepare appropriate recipes. Nothing kills the buzz at a picnic more than having a food mishap. The key is to find easy picnic recipes that aren’t a lot of work to serve and eat.
As I explain in my other article, Essentials for a Perfect Picnic, there are 4 requirements any recipe being considered for a picnic should pass:
- Easy to transport
- Easy to eat
- Can be served cool
- Will withstand wind
I am a little picnic obsessed, which is how I’ve figured all of this out. Lots of experience. So it’s no surprise that I actually know a few recipes that are perfect for any picnic. Without further ado, here are 7 deliciously easy picnic recipes!
7 Easy Picnic Recipes
1. Black Bean and Corn Salsa
Talk about easy! This salsa lasts for hours without refrigeration. The best part? How seriously delicious it is. My boyfriend can never stop talking about how addicting it is. Enjoy it with some multigrain tortilla chips, or it goes great in place of dressing on a salad.
2. Turkey Rollups
Switch up the same old sandwich routine with these amazing turkey roll ups. If made properly, these rollups stay together well, which makes them a breeze to eat. No need to worry about an entire wrap falling apart on your lap! They are also easy to stack on top of each other, eliminating unnecessary containers for transportation.
3. Deviled Eggs
The classic. This is a great recipe for a solo or couple’s picnic, since bringing a lot of them might require extra containers. The eggs are best transported in a short, wide or square plastic food storage container. A plate with foil covering it will be sure to make a mess, I don’t suggest it! You don’t even need a plate for these, since they go down in just one or two bites.
4. Caprese Couscous Salad
I once found this recipe in a cookbook, and I’ve made it so many times since that I have it memorized. The recipe linked below is the closest substitute I could find. The only things missing are shredded chicken breast and balsamic vinegar to top it. This perfect picnic recipe is easy to make, easy to eat, and easy to transport in one bowl. Not to mention, on a mouth-watering scale of 1-10, this recipe is a 15.
5. Spinach Puff Pastry Rolls
I will say these involve a lot of work. However, the end product pays off tenfold. These puff pastries are my favorite recipe on this list. They are also the easiest on this list to eat and transport. I made a double batch for my last picnic and had leftovers all week!
6. Fruit Salad
Fruit salad is pretty self-explanatory. This is a super easy and healthy recipe to bring along as a side or for desert. The dressing on the recipe is good, but I also enjoy fruit salad with no dressing, as the fruit has enough flavor itself.
7. Monster Cookie Bars
Every good meal has dessert, and these monster cookie bars are as good as it gets. Chocolate, peanut butter, oats, m&ms, peanut butter chips – need I say more? Make a big batch for the day of your picnic and have leftovers all week to munch on!
