I love using my crock pot – it makes weeknight dinners incredibly easy. I don’t have to cook after work, since everything’s already been done. There’s a misconception out there that for soups to be hearty and filling, they must include meat. Well, this just isn’t true. To prove that notion wrong, I’ve compiled a list of 21 delicious and hearty crock pot vegetarian soup recipes for you to enjoy.
1. Vegetarian Lentil Tortilla Soup
This is a great vegetarian alternative to chicken tortilla soup, and it’s delicious. Lentils are a great source of fiber and extra protein. When serving, add whatever toppings you like – tortilla chips, avocado, sour cream, cheese, or extra tomato, onion, or jalapenos.
2. Slow Cooker Mushroom Barley Stew
Mhmm, this is a hearty, delicious stew. Start this up on a cold winter day before heading to work, and come home to nice warm dinner. This is an incredibly easy recipe with only 10 ingredients. It goes great with some toasted bread with butter.
3. Crock Pot Spinach Tortellini Soup
This creamy soup isn’t the healthiest on this list. But, if you’re looking for comfort food, look no further. Substitute vegetable broth for the chicken broth to make it truly vegetarian. This recipe is perfect for a cold day curled up on the couch. Mmmm, and if you really want comfort, serve garlic bread or bread sticks on the side.
4. Crock Pot Butternut Squash Soup
This soup is pretty much autumn in a bowl. This smooth, creamy mix of butternut squash, apples, cinnamon, and coconut milk will have you wanting more. This would go great with a nice warm glass of apple cider – or a fall-flavored *adult* beverage.

8. African Inspired Peanut Crock Pot Soup

Even when I wasn’t vegetarian, I was never a big fan of meaty lasagna. I much preferred vegetable lasagna… well now there’s a soup for it. This has all of the same cheesy noodle and vegetable goodness as regular lasagna, but without the messy hassle of layering everything.

Tomato soup is the ultimate comfort food. This recipe is super easy and perfect for a yummy weeknight dinner. Add some grilled cheese on the side and crackers on top, and everyone in the family will be happy. Also, it’s incredibly low-calorie, if that’s something you’re watching.
21. Slow Cooker Potato Soup
This is full on potato, heavy cream, butter, flour, cheese, and sour cream carb and fat loaded goodness. Sometimes you need to treat yourself, and if you decide to do that in soup form, this is the perfect recipe for you. To keep it vegetarian, omit the bacon and switch the chicken broth to vegetable broth. I like to add frozen corn to my potato soup too.
